Substitution

I’m addicted to Chili’s Southwestern Eggrolls.

YUM

However, this keeps me from enjoying them as often as I would like. 

Southwestern Eggrolls w/ Avocado Ranch 1 Serving Calories 910 Fat 57 Sat. Fat 14 Carbs 73 Protein 27 Fiber 7 Sodium 1960  *

I know! 910 calories! 57 FAT calories! And did you see the sodium content? Ridiculous! 
 
Thankfully, I’ve found a flavor substitution. I say ‘flavor’ because it does not come in the same form, but the taste is right on.

We’ve had them grilled and microwaved. They are just as tasty in the microwave, so save yourself the trouble. Admittedly, I don’t know what they taste like without a slice of pepper jack cheese. Try it, I promise you’ll enjoy the flavor without all the calories and sodium. If not, send the rest to me!  🙂

‘Diet’ Muffins

A lady at our co-op was raving about this recipe for ‘diet’ cake the other day. She said it’s something like 4 Weight Watchers points for each serving – which is actually a cupcake. I’m not doing WW, nor am I a huge fan of cake, but the excitement with which she described it really intrigued me. Today, I whipped out the recipe. Again, not a cake lover here and these didn’t convert me, but if you are looking for low-cal/low-fat/low-point cake, give these a try. They were fast, easy, and tasty. Not to mention pretty.

Boxed cake mix of your choice. (‘Duncan Hines Golden Recipe Butter’)
1 can Libby’s pumpkin *This doesn’t give flavor, it just replaced the fat you would normally be adding.
1/2 cup water or FF milk (I used all FF evaporated milk & I think more than 1/2 a cup. I don’t measure.)
Mix & bake. Simple and quick!

Of course, adding a cream cheese frosting ups the points considerably. I’m just sayin’.

MPM

Due to renovations last week, we ate quite alot of junk time saving foods. You know, chicken nuggets, pizza, spaghetti and some fast food. The stove sitting in the entry sort of requires fast food in my book. However, it’s all put back together now (and organized, stay tuned to see my ‘stations’!) , so I will be cooking more healthier meals.

~breakfasts~

oatmeal x2, eggs in a nest, ham & broccoli quiche, biscuits & sausage, cereal, yogurt, fruit, oj, milk

~lunches~

pizza on lavash bread, chef salad, sandwiches x2, baked potatoes, tuna salad, leftovers

~suppers

kidney bean pasta salad (I’ll probably add broccoli or red pepper & call it a meal)

pork chops, mashed potatoes (& gravy!), green beans

turkey taco salad over tortilla chips

roasted chicken, potatoes,  carrots, apples

turkey meatball subs on whole wheat rolls, salad

fish, okra, steamed squash, salad

lasagna (made with ground turkey with fresh spinach added), garlic bread, salad

MPM

There was no menu plan last week and we ate junk (convenience foods & sandwiches) most of the week! I guess that old saying is true “If you fail to plan, you plan to fail.” 😦

New week, new plan, new attitude. Right? Well, that’s what I keep telling myself anyway! New format too:

~Monday~

breakfast: Honey Nut Cheerios, 2% milk, bananas

lunch: peanut butter & jelly sandwiches, red grapes

snack: sliced apples, peanut butter or yogurt for dipping

supper: beef & barley soup, homemade bread

 

~Tuesday~

breakfast: eggs in a nest, red grapes

lunch: Ramen noodles with diced ham (kids), salad (me), sliced apples

snack: ginger snaps with milk

supper: spaghetti squash, turkey meatballs, garlic bread, + popcorn & cherry limeades while watching the election results!

 

~Wednesday~

breakfast: overnight crock pot oatmeal, oj

lunch: grilled roast beef & provolone sandwiches, tomato soup

snack: banana bread, milk

supper: chicken spagetti, salad, banana bread

 

~Thursday~ *We may be meeting friends for the day, but I’m planning something just in case!

breakfast: Honey Nut Cheerios, 2% milk, bananas

lunch: chicken salad sandwiches, chips, baby carrots

snack: spicy popcorn, Sprite

supper: salmon, steamed veggies, rolls

 

~Friday~

breakfast: ham & cheese corn muffins, applesauce

lunch: homemade corn dogs & mac & cheese

snack: pepper jack cheese & pretzels

supper: crockpot chicken & rice (it’s so easy there is no recipe!), green beans, fruit

 

~Saturday~

breakfast: pancakes with blueberry topping & whipped cream, bacon

lunch: mixed greens with beans & cornbread (girls), pb&j sandwiches with chips (boys)

snack: banana cream pie yogurt, graham crackers

supper: I’m holding out for pizza! There’s a new place in town that I’m eager to try.

 

~Sunday~

breakfast: pumpkin cream cheese muffins, oj

lunch: chicken enchilada casserole, Spanish rice, salad

snack: popcorn, Sprite

supper: leftovers or make-your-own

Now, folks, that is a lot of cooking and baking for me. We’ll see how it goes.

Menu Plan Monday

Last week was a bust! It was completely insane! ‘Things’ kept happening, plans kept changing and meals were switched around many times. Shamefully I admit my family ate fast food more than once!  Yuck. Hopefully we can get back on track and actually eat at home this week.

breakfasts: oatmeal, quiche, toast with peanut butter, waffles & pancakes from the freezer, fruit, oj, yogurt or milk

lunches: leftovers, sandwiches: pbj or turkey, corn dogs, tortilla wraps, fruits

lasagna, salad, sorbet

oven roasted chicken, veggie saute, rice, fruit

taco salad, Spanish rice, fruit

pasta fagioli, Italian cheese bread, fruit and yogurt parfaits

chicken and dumplings, steamed broccoli, banana pudding

15 bean soup, cornbread, jello

homemade pizza, salad, ice cream

Menu Plan Monday

This is the plan I made out last Thursday. However, after the weekend (hectic) and this morning (grumpy kids/exhausted mom)…it may not come to pass. It’s shaping up to be a very busy week for me. My family may be served sandwiches all week. Let’s hope not.

breakfasts: baked oatmeal, Farmer’s Casserole, oatmeal muffins, waffles & pancakes from the freezer, fruit, oj, yogurt or milk

lunches: leftovers, tuna salad with crackers, sandwiches: pbj or turkey, soup or chili from the freezer, fruits

suppers:

*pasta fagioli, Italian cheese bread, salad, fruit

oven roasted chicken, veggie saute (zucchini, yellow squash, red onion in olive oil), brown rice, sorbet

taco salad, Spanish rice, brownies

*spaghetti carbonara, salad, fruit

lazy lasagna, salad, fruit

homemade pizzas, salad, ice cream

*I’m also trying to incorporate a few meatless meals. My husband may not be quite thrilled with the idea, but he is not one to complain. We’ll see how it goes. Yes, I do realize there is bacon in the carbonara. However, it is not enough to be considered ‘meat’ by anyone in this household!

Relay for Life

My Reason to Relay is to join people around the world in celebrating those who have survived cancer, remembering the people we’ve lost, and supporting the lifesaving mission of the American Cancer Society.

Many of you are aware that I lost my mom, Doretta W., last April. I am relaying in memory of her. She was a long-time cancer survivor. At 15 years of age, and then again at 20, she endured radiation treatments for Hodgkins disease. This radiation killed the cancer, but it also caused irreversable damage to her other organs. Ultimately, cancer took my mom at 53 years of age.

 Thankfully, treatment today has ‘come a long way, Baby’! Please consider making a donation to continue research so that future generations will not have to endure cancer threatening the lives of their friends and family. You have the power to fight back against a disease that affects millions.
