In my last menu post (way back on 9/22!!!) I said something along the lines of having ‘life under control’ since we had started back to school. Oh, what an absolute lie that was. Thankfully, nothing major has happened, but we’ve been B U S Y again. Well, I do aim to get back on track this week. There are more pre-processed foods than I like, but I have pneumonia and am cutting ‘energy’ corners where I can. Here is what I am hoping will happen:
Breakfasts: oatmeal, ham & cheese corn muffins, eggs in a nest, waffles from the freezer, fruits, milk & oj
Dinners: Wendy’s (Monday co-op), sandwiches using peanut butter/ham/turkey (no, not all together that would be gross!), zuchinni pizzas, chicken salad stuffed pitas, fruits
Suppers:
Monday~turkey burgers with sauted onions and mushrooms, seasoned fries, s’mores in the microwave or ice cream
Tuesday~dd is making Navajo tacos <Thanks Angie> with Spanish rice, ice cream
Wednesday~tuna noodle casserole using canned cream soup! and peas
Thursday~fish sticks, mac & cheese, green beans
Friday~beef/veggie soup and cornbread
